How to brew at home
Water temp
90-95°C (lightly fermented oolong — do not use 100°C boiling water or the brew turns bitter and loses its young-rice aroma)
Tea : water ratio
About 5g of tea per 150-200ml of water (a porcelain or ceramic teapot works best)
Steep time
First infusion 40-60 seconds; add 10-20 seconds for each subsequent infusion. A good oolong can be brewed 4-6 times, the flavor unfolding gradually with each round
Tip: Rinse the tea quickly with hot water (about 5 seconds, then pour it off) before the first infusion — this lets the leaves open up and awakens the young-rice aroma. Don't let the leaves steep too long in the pot between infusions.

Oolong Milk TeaIngredients
- 10g Xuan Xanh green oolong tea
- 200ml hot water at 90°C
- 30-40ml condensed milk (adjust to taste)
- 60ml unsweetened fresh milk
- Ice cubes
Steps
- 1Steep 10g of tea in 200ml of 90°C water for 4-5 minutes to make a strong brew (since it will be diluted with milk and ice), then strain out the leaves.
- 2While the tea is still warm, stir in the condensed milk and taste for your preferred sweetness.
- 3Add the unsweetened fresh milk and stir well for a creamy, smooth texture.
- 4Let it cool slightly, then pour over a glass full of ice. Add pearls if you like.
