How to brew at home
Water temp
95-100°C (a full rolling boil; you can let it sit 5-10 seconds for a slightly gentler brew)
Tea : water ratio
2-3g of tea per 200-250ml of water (about one heaping teaspoon per cup)
Steep time
Steep for 3-4 minutes. For milk tea, steep stronger, about 4-5 minutes
Tip: Black tea only releases its full aroma when brewed with truly boiling water. For milk tea or iced tea, just steep twice as strong, since it will be diluted later with milk or ice.

- 3g WECHA black tea (about 1.5 teaspoons)
- 120ml boiling water at 95-100°C
- 60ml unsweetened fresh milk (or 40ml condensed milk)
- 15-20ml sugar syrup or brown sugar, adjusted to taste
- A glass full of ice cubes
Steps
- 1Steep the black tea in 120ml of boiling water for 4-5 minutes until very strong, then strain out the leaves.
- 2Add the sugar syrup (or condensed milk) to the hot tea and stir until dissolved.
- 3Add the fresh milk, stir well, and let it cool down a bit.
- 4Pour into a glass full of ice and stir gently. Add tapioca pearls if you like.
- 5Taste and adjust the sweetness to your liking before enjoying.
