Assam is a renowned tea region along the Brahmaputra River in India, producing some of the strongest, boldest black tea leaves in the world. How to brew at home
Water temp
95-100°C (bring water to a full boil, then let it rest a few seconds) — Assam black tea needs very hot water to release its full malty flavor
Tea : water ratio
3-4g of tea per 200-250ml of water (about one heaping teaspoon per cup)
Steep time
For a hot cup of tea: steep 3-4 minutes. For milk tea: steep strong for 5-7 minutes until the liquor is deep red and bold
Tip: For milk tea, steep stronger than usual (more tea, longer soak) — the milk will mellow it, so the tea needs to be bold enough not to get lost. When drinking the tea plain, avoid over-steeping or it turns harshly astringent.

- 4-5g Assam black tea (about 1.5 heaping teaspoons)
- 120ml boiling water at 95-100°C for steeping the tea
- 40-60ml condensed milk (depending on how sweet you like it) or 100ml fresh milk + 1-2 spoons of sugar
- A glass full of ice
- Toppings to taste: brown sugar pearls, jelly
Steps
- 1Steep 4-5g of tea in 120ml of boiling water for 5-7 minutes until the liquor is deep red and bold, then strain out the leaves.
- 2While the tea is still warm, stir in the condensed milk (or fresh milk + sugar) — taste and adjust the sweetness to your liking.
- 3Let the mixture cool down, or chill it in the fridge for a few minutes.
- 4Fill a glass with ice, add toppings if you like, pour in the milk tea and stir well. Enjoy cold.
