How to brew at home
Water temp
90-95°C (medium-fermented oolong; don't use 100°C boiling water or it turns harsh)
Tea : water ratio
About 5g of tea per 150-200ml of water (for milk tea, make it stronger: 8-10g per 250ml)
Steep time
1st infusion: 40-60 seconds; increase each later infusion by 20-30 seconds. Good for 4-5 infusions
Tip: Rinse the tea quickly for 5-10 seconds with hot water and discard, to awaken the leaves and wash off dust — the following infusions will be more fragrant

Phu Quy Oolong Milk Tea with Cheese FoamIngredients
- 10g Phu Quy Oolong + 250ml hot water at 90-95°C
- 30-40ml condensed milk (or 2-3 tablespoons, depending on desired sweetness)
- 60ml unsweetened fresh milk
- Cheese foam layer: 50ml whipping cream + 30g cream cheese + 1 teaspoon sugar + a pinch of salt, whipped until fluffy
- Ice cubes
Steps
- 1Steep 10g of tea in 250ml of water at 90-95°C for 4-5 minutes to draw out a strong brew, strain out the leaves, and let it cool slightly
- 2Stir the tea with the condensed milk and fresh milk until fully dissolved, then taste and adjust the sweetness
- 3Pour the milk tea into a glass full of ice
- 4Whip the cheese-foam mixture until fluffy, then layer it thickly over the top of the glass
- Dust a little cocoa powder or tea powder over the foam for looks, and sip from the tilted glass so the salty, creamy foam blends with the strong tea
